Our chefs love winter, as it is a time when they get to prepare feel-good, home-style healthy food. A time when fresh hot bread accompanies hearty soups or spectacular oxtail ballontine.

A good green vegetable curry is a firm favourite in the kitchen. Prepared not too spicy, its distinctive aroma fills the kitchen and gets taste buds tingling. This dish is best accompanied by steamed basmati rice, sambles, tzatziki and tomato chilli chutney and is enough to warm up cold bodies on the chilliest of African winter evenings.

It’s during winter that the chefs have what is arguably the best spot in this Kapama lodge. Planted firmly in front of a hot pass and warm stove, delicious smells filling the air, the culinary team get to do what they love best.

Menus at the Camp Jabulani restaurant are always altered according to the availability of produce. In winter we use more earthy vegetables such as carrots, beetroot, cabbage and parsnips, creating layers of distinctive flavour.

No meal is complete without a good dessert. In winter we love to serve smooth chocolate fondant or a rooibos tea soufflé. They are guaranteed to send our guests off with smiles on their faces and ready for bed – feeling warm, full, and satisfied.
