Chicken breasts ala Camp Jabulani


Chicken breasts served on a bed of steamed greens with a honey mustard cream sauce

We – being Camp Jabulani’s kitchen elves – have decided to share yet another of our magnificent recipes with you.

This time it’s a main course, and requires a trip to your local organic farmers market for some plump chicken breasts and fresh vegetables. However, if you’re more of a city slicker, then a visit to the supermarket will do equally well.

Just remember to frequent the organic section!

There’s no doubt that organically grown produce is better for your health and the environment. But of equal importance is the fact that you’ll be supporting farmers who grow their produce without the aid of chemicals and pesticides, and let their chickens behave like chickens instead of keeping them cooped up inside.

Marinade

  • 4 Chicken breasts
  • 20ml Soya sauce
  • 20ml Olive oil
  • 1ml Black pepper

Method

  • Mix all ingredients together and place in a dish large enough to hold the breasts.
  • Marinate in the fridge for 2hours.
  • Grill on griddle pan till cooked through.

Sauce

  • 200ml Cream
  • 15ml Whole grain mustard
  • 15ml Honey
  • 1ml Salt
  • 1ml Black pepper

Method

  • Mix all ingredients together in a sauce pan.
  • Put on low heat and let it reduce until its thick and creamy.

Steamed Greens

  • 250g Sugar snap peas
  • 250g Green beans
  • 250g Green asparagus

Method

  • Boil water with a good pinch of salt.
  • Blanche until just al denté and then refresh in ice cold water.
  • Reheat in a warm pan just before serving.

This mouthwatering recipe makes four servings, which is definitely not enough for four of you!
